5 Simple Dishes for Summer Nights

During the summer you want to get home from work and enjoy your outside space. Eating outside is an option most nights but you won't want to eat food that takes too long to prepare, so the best foods for summer are simple dishes that are quick and easy. During the summer, we eat more salads than vegetables. We snack on fruit that cools us down like watermelon and strawberries. We tend to eat less red meat as we enjoy lighter meals with fish or chicken as the main part of the dish. The perfect recipes for summer are colorful, healthy and tasty.

Cornflake Chicken

Let's take something you eat for breakfast and combine it with your evening meal for a dish that's a bit different and very tasty. The cornflakes you'll be using for this evening meal are crunched up and mixed with parmesan and olive oil to form the coating for your chicken, which is then baked for 10 to 15 minutes. Now cook one chopped shallot in butter over medium heat for two to four minutes. Stir one cup of peas in with the shallot before stirring in 1/4 cup of mint leaves and a little lemon zest. Season with black pepper and serve with peas and potatoes or fries.

BLT Pasta Salad

Pasta gives the carbs you'll need for energy while the salad offers the flavor you'll need for a great meal in this next summer favorite. This very simple dish can be made quickly and it's great if you've got a lot of people coming for dinner. Just cook pasta as instructed on the packet. While that's bubbling away, cook the bacon. In a large bowl, combine tomato and romaine lettuce to which you add the bacon and pasta. Use both ranch dressing and barbecue sauce to make this unique tasting BLT salad.

Honey-Glazed Salmon

Fish is normally part of the menu during the summer, so why not try honey-glazed salmon? Before you do anything else, preheat the oven to 350 degrees Fahrenheit. While that's heating up, sprinkle the top of the salmon fillets with salt and pepper before drizzling honey. Now rub that over the salmon. Now cook a large skillet in a pan over a medium heat and then add olive oil. When it's hot, add the salmon fillets and cook until the bottom is golden brown. While it cooks add more honey to the top of the filets along with salt and pepper. Now transfer the fillets to a baking tray and bake for seven to 10 minutes. When cooked, serve with salad.

Crab Hush Puppies

This great appetizer won't make the main meal but it's perfect when combined with one of the other recipes suggested here. Just heat a little oil in a Dutch oven over a medium heat. While that's heating up, whisk cornmeal, baking powder, flour, cayenne and 3/4 teaspoon of salt in a bowl. Add scallions and chives before whisking together. Now add in crabmeat and grated Gruye?re cheese and stir well. Now add buttermilk and egg and mix until everything combines. Use a tablespoon to add the batter mixture you made to the Dutch oven. Don't over crowd the pot though. You'll only need three to five minutes to change your mixture into deliciously cheesy crab hush puppies.

Barbecue

Not every dish we eat in summer is healthy. Sometimes we enjoy cooking outside as much as we enjoy eating outside so why not throw some burgers onto the BBQ and then top with Emmental cheese, lettuce, and tomatoes, and serve with a green chili and cornichon relish. Add a salad on the side and you'll kid yourself that it's healthy. For a healthier alternative, try vegetarian burgers. A spicy lentil burger or a vegan black bean burger will be loaded with flavor without all the calories found in beef.
